I'd like to see the recipe. I'm one of those people that usually uses salt and pepper only ... a lot of it ..., but sometimes I add a few other things, and I like to experiment.

Speaking of Walsh's book on Texas Barbercue, he mentions the Kreuz Meat Market in Lockhart, which is about a one hour drive for me. They have alwasy cooked brisket with salt and pepper only and is about as good as barbecue gets IMO. I go down there from time to time just to recalibrate my taste buds on how brisket should taste.
