That's prolly the best eating on spares. I think they should of been done after the first 3 hours. No foiled in pan needed. Just slice, glaze, and serve. Sounds like you cooked all the juicyness of them to me.
I save all my spare trimmings and evert two months when I get about 20 pounds they get cooked and diced for beans, taters. Really a good serve on Monday Night football. Once cooked they vacum freeze well and can be reheated anytime.
