Yo Jon, I have tried the Melinda's Original Hot Sauce and really liked it. It had good flavor with out being stupidly hot. By stupidly hot, I mean it was not so hot that it paralyzes your taste buds to a point where you have no sense of taste.

The bottle above is my favorite hot sauce, made by Bill Wharton, AKA The Sauce Boss. I like his habanero sauce too, but I prefer the datil pepper sauce. Old Bill is a traveling musician who cooks gumbo on stage as he plays. He gets his audience involved in the cooking as he wails on his guitar singing the blues.

One of the clauses in his contract to play at the music venue is called the gumbo rider. It basically lists all the ingredients you need to have prepared and on hand for him to cook. The promoter evens needs to provide the big pot for cooking the gumbo. All Bill travels with to cook is his spatula, paddle to stir the gumbo, turkey fryer and a propane tank. Oh he does make the roux himself and provides the andouille sausage. All the other ingredients are provided by the venue. When Bill and his band are done playing, it is time to eat and he feeds the whole bar. If you ever get a chance to see him live, go for it!

Oh and by the way, I use bottled lemon juice in the marinade recipe, but I am sure fresh squeezed would work just as well, probably better.
