If you're setting the temp at 180 and it goes over 300 you've got a problem.

Make sure the temp probe inside is clean and unblocked. Make sure the racks don't touch it either (some versions have an adjustable shelf the if placed wrong, will allow a rack to touch the probe).

If after that you set it that low and it goes over 300, then you have some electronic problems.

A runaway smoker.

What I do, to minimize overrun, is when I see it getting to the temp I set, I just open the door and dump a little heat. The smoker is trying to get to temp and is dumping pellets madly to make it work. I just like to minimize my overrun. You don't have to, but I do just because I do.
