Sounds like the blower fan in not working right how old is your cooker they changed the fan cover a couple years back to were it would get more air too it have you taken the side cover off the control box and watched and listen to the fans and see if they are ramping up and down just a thought looks like to me your cooker is over filling the fire pot thats why you are getting you heat spikes and if the fan is not working right it could be over filling and smoothering it out. you might ask Eddy and see what he thinks about the fan being the problem i was having some problems like this and it was my blower fan did some rewiring and works great now and he talked me through it over the phone. good luck
