I cooked a small pig in my FEC100. Had a rack welded measuring the cooker diagonally from drip pan to about 12 inches from the opposite top. Spike in the middle of the rack held the pig by the backbone. Stuck the snout out the exhaust. Easy to move the pig out of the cooker for presenting and eating.
Old Dave did one in his Backwoods. I don't remember which model, but I think it was the one above the Fatboy. Looked pretty, except for the crick in its neck (no exhaust to stick the snout out.
