Hope and pray some fire marshall decides that there's no way any uncertified canopy will be allowed to cover (extend over) the exhaust stack/outlet of a smoker that's being used for cooking. And it doesn't matter that the canopy is many feet above the exhaust outlet. That happens a lot where I "play." The trouble is, they're inconsistent about enforcement, so you never know where/when it'll become an issue. I have seen competitions almost fully shut down on Friday afternoon after all the teams were in place. It's not a pretty thing to experience, not to the organizer and certainly not to the teams. The trouble is "He's Got The Pow-ah" and is more than willing, if not anxious, to exert it. Good Q'en On Ya'. John
