If you freeze individually then it should just take a day depending on how many you have. If you were doing 30 slabs then that's a lot of frozen meat to put in a cooler or fridge and it would take longer. And for thawing remember an extreme cooler holds ice for 5 days so that means it holds frozen meat still frozen for 5 days. A fridge works best.
