I sometimes have the same problem with the breast meat being a little dry, but it seems to be more of a problem if I go with a lower temp. I like to get the smoker around 375-400 to start, then knock it back to 325-335. One thing I've tried that seems to help keep the breast meat from drying out to much is tenting about half way through the cook. I also think size matters, so I try for 12-14 pound birds. Any bigger and I debone and cook the breast seperately. Tied of course.
