I usually figure 1/3 lb. per person on pulled pork. So, with 30 folks you'll need around 10 lbs. of finished product. This generally equates to about 20 lbs. raw weight. So, depending on the size of your butts (grin - insert Sir Mix-A-Lot lyrics), you'll need somewhere between two and three butts. Always err on the side of more than less.
Beans - a 10 lb. can should be more than enough. With fixin's added, this makes about a gallon of beans and that will be plenty for 30 people.
Slaw - in my experience, I can usually get by with about half as much slaw as beans. However, it's relatively cheap, so I'd go with a gallon of it too.
