Around Louisiana, there are more IBCA contests compared to the KCBS ones. Typically, I hear that KCBS has the garnish in the box (compared to foil) and judges want the meat sweeter with more sauce than IBCA. Remember that judges in IBCA use a knife and fork to sample each box. Typically IBCA entries are a bit more done compared to KCBS, since they use plastic silverware. For brisket in particular, KCBS seems to like sweet brisket. In IBCA, well, the words sweet and brisket never appear in the same sentence (as it should be).
