Re-Heating Ribs (Again)

I have a big job comming up in the furture. I'm going to need to have at least 400 slabs. They want pulled pork and chopped beef samies also. I know I can do the pork and beef ahead of time and reheat it in foil pans. I have to have it all ready at the same time. What do you do when you have to have it all ready together?
