Hi..well I brined them for about 6 hours and they turned out fantastic. Cooked them about 300* on the hot side of the smoker with a water pan underneath using a chunk of apple and hickory. Juicy, crisp skin,no hint of dry, exactly what i set out to do. Was worried about spongy chicken when I set out to do this but that was not the case.
