Some soot buildup is normal, but you shouldn't have a bunch of grease in there. Cleaning a ceramic is simple; just load it with coal and crank the temp up to 5-600 degrees for a few hours. Any gunk should burn off. After you've put the fire out and cooled the cooker down use a ball of tinfoil to rub off any big charred deposits left over, then clean out the ash as usual.
