After about an hour of foil time I do what I call a “SAG” test. I lay the foiled up slab of ribs in my hand .Gloves on of course , I look to see how much they’re sagging in my hand .Just foiled ribs will be quite stiff. Severely over cooked ribs will sag so much that the portion outside my had are almost vertical. I’m looking for something in the middle .
I pull them before they get to overdone.
