Tonite some nice thick cut calve's liver seasoned with salt, pepper and just a bit of bbq rub, coated on both sides with some olive oil and butter spray, done quickly on a screaming hot grill, nice and medium to medium rare and a little char on the outside. It's going on some homemade toasted garlic ciabatta bread with some fried/caramelized onions and mushrooms with a little 12 year old balsamic to finish. Tomorrow, maybe a homemade Margherita pizza!
