Well to begin with, I don't cook bbq meat that I didn't buy. I want total control over the meat and the temps it has been stored at. If they pay you for the meat you purchased and you want paid for your time and effort, your kids are involved???? What is your donation price???
You need at least 125#s of brisket. (based on a 45% yield for finished product)
Cover your expenses of fire wood, charcoal, rubs and sauces and write off your time as a charitable donation.
Other than that, I buy the meat and sell brisket @ $12.00/ pound. Sauced, panned, hot and ready to serve. Never had a complaint, with repeat customers.
