I agree with Steve. I cooked a packer for a guy that when I gave it back to him cooked, he acussed me of keeping half of it. It wasn't until I showed him how much fat I trimmed off it and then the shrinkage, that he beleive me.
I'm with Steve all the way. I buy what I want to cook so I know what's going out. If something is wrong with it, it would be on me, and not someone giving me 6 briskets and expect to feed 100 people with it.
