Hi...picked up this monster of a bird and want to smoke it on my offset. A little larger than I have used in the past I am brining overnight butter flying and aim to smoke at 275-300*. I am also doing ribs which typically take 4 hours roughly. Question, when should I throw on the bird? I usually wait 2 hours with the typical 4lb birds in the past. But with this one it is like trying to figure out how long to cook a small turkey! Any feedback appreciated.
