I just smoked a n 8 lb. chicken the other day in my offset Klose Backyard Pit! I didn't butterfly it though...cooked it the beer can way and I cooked it for 4 hours at 250-260 degrees. Went light on the smoke so as not to turn the thing black. Came out really moist and tender. I didn't even brine it. We brined things in cooking school and it always tasted too salty to me...so I stay away from it...but that's just me. Anyway, it came out really good!
