Thanks for the replies...I am butterflying it to hopefully cut down on the cooking time for this behemoth. I am making with ribs and then taking for an hour up to my cousins place...with recently added family who will be there I upgraded from a 4lb bird I was originally going to bring and what I am pretty accustomed on cooking. I already talked with them last night to change from 'be here at 3' to 'i will call when leaving our place' I typically cook the chicken legs facing the fire box on the hot side of offset at 300 and ribs on a rib rack mid way level at 250 on the smoker. To flip or not to flip? Typically with the smaller ones cooking for 1-1.5 hours I don't bother but what about this one? I was thinking carcass side down for first hour and a half then flip and start spraying with my apple juice mixture?
