My wife is the grilling expert in my family (I do all the BBQ though). She grills the chicken on soaked cedar planks until the planks are just about to burst into flames. Then she removes the chicken from the planks and finishes them directly on the grill to crisp the skin and bring the chicken to temperature. The chicken ends-up with a beautiful cedar smoke flavor, crisp skin, and it is never undercooked (or overcooked for that matter).
