I've had too much smoke when I add wood on top of coals. I keep coals in the middle, and add wood to the sides.
You need plenty of airflow to burn wood. The smoke out the stack should be almost clear, with a bluish tint. If it's white, you need more air or less wood.
It will be white for a little while when you add fresh wood, but will clear up soon if you haven't overdone it.
A digital thermo on the grate will show temp swings. A dial, not so much. Don't worry about it, try to maintain an average temp during the cook.
