Just thought I would share some info on how a case of spares came out. I bought a case of IBP spares at Sam's club for $1.99/lb. The case weighed just a hair over 42lbs. I trimmed them down to St Louis cut and deboned the trim. I ended up with about 18lbs of boneless meat for sausage and threw out about 3lbs of bones. Usually I save these to smoke and put in soup, but I am tight on freezer space. So, the 9 racks of St Louis ribs worked out to be about $4/lb if you don't factor in the value of the sausage trim. Overall, they are pretty decent looking ribs.
