I really appreciate your comments. I haven't read the other two yet, but printed them off to read. A lot of these comments are discussed in our CBJ classes and they are a lot of what instructors are trying to get across. Much thought went into your article and we are blessed to have someone having so much insight and seriousness to our judging standards.
Cookers! A lot of times in the thighs there are veins that need to be pulled out. If not,even if your temp reads over 165, those veins break and that's where the blood shows up. That's raw blood.
