Was the turkey packed in a solution? If so you brined twice and that's not a good idea. A lot of chemicals and salt.
I do whole turkeys and breasts. Cook without brining even fresh amish turkeys. Add fruit and onion and spices to cavity. No mustard. Can do this using cheesecloth idea below with just a breast as well.
If it's getting that dark after only 1.5 hours of cooking then you probably have too much smoke. Try a light wood not hickory and use charcoal as the heat source. Might want to also try a higher heat like 275-300. Try covering with cheesecloth dipped in vinegar for all but the last hour of cooking.
Can try cooking in a V-rack with the breast meaat side down.
