That's how I learned it....and there is no substitute. Unfortunately, todays judges cannot pick up on the differences so we cook the "traditional" competition style.
The last time I saw someone create a real pit...use a burn barrel and make REAL BBQ in a competition, he ended up middle of the pack. Having tasted it.....what a shame. He honestly should have won....
