Just watch it when it gets to about 195 internal in the flat. You are getting close to done at that point. Depends on the fat content and how big the brisket is. The time per pound thingy is just a guess what part anyway. 250* smoker temp will jack up the times posted for a 225* smoker and you don't want to do that to a good brisket. For a 14# brisket you are probably looking at 7-8 hours at 250*. Higher temps - shorter cook times.
