I have seen a few folks on TV that cook their meat in a pan the entire time. I think it stays open for a period and then sealed when it reaches a certain temp. Supposedly, this preserves juices. I do not know if it makes a difference as I have not tried it. Anyway, To the original poster, If you plan to fully foil at 165ish internal, then I would probably flip it so it is flat side down so that it is braising in its own juices that you have collected in the pan. If you want to preserve a firm bark, then you can leave it as is.

To answer your original question. I would keep the hot dogs in the fridge, I doubt you will need them. You should be fine.
