Here is one I use when time is short......
Easy Peasy Jambalaya
1 stick of butter
4 cooked chicken breast
1 ½ to 2 pounds sausage
1 ¾ cup Uncle Ben’s converted rice
1 can crushed tomatoes un-drained
3 cans diced tomatoes un-drained
2 cans chicken broth
2 green peppers
2 tablespoons Cajun seasoning
Melt butter. Sauté’ onions and peppers. Add broth, tomatoes and rice. Add diced chicken and sliced sausage. Add seasoning. Simmer for 30 minutes.
