I've been smoking on an offset Klose pit for over 8 years and have used foil hotel and half hotel pans for everything I cook...chickens, brisket, chuck roast, bologna...just about everything and have had amazing results much of the time. Keeps the smoker very clean and does not seem to take avway from flavor at all. Try it!!
