Well, I cooked two 6.5 lb. whole chickens on my offset pit yesterday...no brining or anything...with just a little dry rub...for 3 and a half hours and they came out great! skin was sort of crispy in places and a tad leathery in others but all in all I was very satisfied with the results. I haven't cook a lot of chickens so I was very happy with the outcome. Just sayin'...
