I absolutely love hot smoked salmon. Put it in a cure of salt, brown sugar and pepper for four hours. Rinse off and thoroughly dry. Put some BBQ rub and smoke with a light wood like apple or charcoal for 90 minutes at 225-250. It's delicious hot or cold.
