I'm almost afraid to yell y'all for fear you'll waste ur ingredients, too.
Took a recipe for hot water cornbread (no wheat) and substituted the white corn meal and added a touch of frozen corn.
The batter was really loose even after addind a lot more meal... almost a mush. But it was tight enough to fry. Fried in a qtr inch of coconut oil in cast iron skillet.
I think I should have gone 50-50 with yellow corn meal to help the batter, or added a touch more sugar. Flavor was there, but consistency was odd- could have been the coconut oil, too.
1tsp salt (I used 1/2)
1tsp sugar (I used 2)
0.75cup boiling water
>added 0.5cup corn
I'm trying to reduce wheat consumption- anyone else have a recipe to share?
