Steve, you are right....I do the chicken quarters in an aluminum pan, covered for about 20 minutes, uncover with BBQ sauce poured over them for another 20 minutes. You pick up the leg bone and just falls apart. Take some of the juice and dip each bite. Doesn't get any better than that....
