There will be side for this event but I am not doing them, just meat.
I do not do much catering with Brisket or catering itself, all just for fun.
My ribs, chicken & pulled pork I have no problem with for I do them often enough. Brisket on the other hand "occasionally" and never this much.
I could have sworn I based it on a 1/3 of a pound, but when looking at my notes it said 1/2. I donít know maybe thatís what I read on the forum some time ago...
Anyway, let me ask- Being that it was fuzzy math is (9) briskets going to be enough and should I buy flats. I have never done flats only packers. Should I change?????
