One thing to remember, if you have much wind blowing your hog could spoil before it gets cooked. I saw a man try to cook a hog on a spit about 17 or 18 years ago @ Tryon and the wind blew the heat away from the hog and it spoiled before it got done. You need a backup plan of some kind of wind shield...wood,metal etc. Another backup plan would be to have some hot dogs and buns hidden behind the wood pile in the event the hog doesn't get done.
