Many MIM cooks don't flip the hog. A hog will fall off of a spit before it is tender enough to pull. Have you thought about how to secure the hog to the spit? There is a steep learining curve on both methods. I have a spit cooker and another that lays the hog flat. I much perfer to cook the hog flat. God luck.
