I just got my brand new Lang 36 on Friday and decided to make 2 racks of baby backs and 2 racks of spares. I made my own rub but I wasn't happy with it. I tried adding as much salt as I did sugar and it was wayyyyy too salty. How much should I use Salt/Sugar? 1:1? 1:2? 1:3?

Also, how do I get the ribs to fall off the bone? I smoked the baby backs for about 4.5 hours and the spares for 5.5 all at 225 most of the time. I didn't wrap it or mop it. Just let it cook. Is that what I'm doing wrong? It did end up with a nice thick bark that I was happy with. Also, I rub the ribs the night before and let it sit in the fridge overnight.

Here's what I used for my rub:

2Cups Demerrara Sugar
1.5Cups Salt
1Cup Hazelnut Coffee
2TBS Cayenne
2TBS Chipotle
2TBS Ancho
2TBS Thyme
2TBS Honey
2TBS Granulated Garlic
2TBS Onion Powder
2TBS Black Pepper
2TBS Cumin
