Let's see, where to start. Let's go with the rub. I too tried my hand at making my own rub. In fact, I won a smoker for the rub I made, but I wasn't all that happy with it. So, I tried several off the shelf rubs, and found several I like very well. In fact I have been using them for the past 5 years at contests, and fair OK with them. Why re invent the wheel. Most rubs are made by folks that do Comp cooking, so you know they work. Give several off the shelf rubs on your ribs, like Smokin in the dark, regular mixed with a little Mary's Cherry. All can be purchased online at Hawgeye's. Mike will hook you up. In fack, just wonder around his site, you might pick up something better you like.

As for the ribs, if you are looking for fall off the bone for friends and family, try the 3-2-1 method. And the last hour, wrap in foil. It will work like a champ for ya. Leaving them in the frige with rub on them over night, is OK. Now Baby's will cook faster than spares as it seems you know, so watch them when you foil them. In fact, what any ribs you foil. It's real easy to turn them into mush. But they will be falling off the bone.g
