As a judge, the most common errors I see in cooking are over-saucing, over-smoking, and yes, even over-rubbing. Most rubs have a lot of salt, anyway and care should be taken to avoid the drying effects from it (can make the bark hard and chewy). Be moderate with the rub, injection, mop, sauce, and smoke so that all will work together with the natural flavor of the meat to create an interesting balance and no one thing dominates.
