Amen to the over saucing Thing. The PNWBA uses comment cards at it's comps. I'm not too fond of this, but it does serve a purpose. With ribs, and particularly chicken my comments are:"To much sauce, I want to taste the meat, or "Your sauce does not compliment the meat." Another for both rubs and sauces is: "Loose the ground chilli powder. If you want a little heat, use ground chillies" Competitors as well as judges need to remember that while sauced product may look good in the box, it" the MEAT that is being judged. Think the next critique or comment I'll use is "I had to wipe off the sauce so I could taste the meat" Maybe they will get it!
