I consider consistency a "better" factor. Yes, I can use a dial thermometer and produce a desired result. Accuracy and speed means that I have a higher probability of producing that same result 100 times either as 100 different cooks or one massive cook.

On more than one occasion, I've cooked 500 lbs of pork in a single cook. I'm sure that using a Thermapen that reads faster and more accurately, helped that 500 lb batch of pork turn out better than a dial thermometer would have. Again, not a magic wand, but a tool that aids my process.
