Won't comment on all your drivel. Sauce is a liquid. Be it based on mustard, vinegar, or tomato, it's also acid. But I think you know that. Do you not understand the meaning of the word "usually"? In so far as meat cut on the bias is concerned, I have seen and have had brisket cut with the grain. The other Robert hit the nail on the head.
