Some of what bothers me is the difference in what the words such as tender, cleanly from the bone, pull test, moist, dry etc. mean to different folks. Without some specific definitions and standards there will always be a lot of up and down in scores. Maybe we should use a Rockwell hardness tester to test the tenderness and a set of fishing scales to do the pull test. I do not think these measuring devises would measure what we need but maybe they would if tender was tough enough. How tender is tender anyway? To some one with bad teeth and gums tender is way more tender than tender is to someone with a good set of choppers. Maybe the judges should be given a dental checkup before each contest to be sure they are all using the same standards. Have you ever watched an old geezer try to open a pack of mayo at a resturant. (I have trouble with this myself sometimes) Is that guy going to give the same pull test as as the young guy that cuts grass all day for a living?
