Hey all,
Just did my first smoke on a WSM. Split chickens came out quite nice. Since I am trying to learn how the cooker handles I used 6 cherry wood chunks and the minion method. 3 chunks under and 3 chunks on top. So the cooker kept going for at least 8 hours with the amount of charcoal that i used(full charcoal ring. When I checked the coals after one hour just to see what it looked like(learning experience remember) I noticed that the wood really wasnt smoldering any longer.

Is this is what is supposed to happen? I am used to using a charcoal grill and wood chips in aluminum foil packet so i didnt know what to expect. And when you do a longer cook such as a brisket and you have to add more charcoal do you add more wood chunks also?

Any help and suggestions are appreciated
