My first question is this: Have you ever cooked a KCBS BBQ Competition?
If your answer is NO, then you need to do it, and not wait until your 30th CBJ experience. It's not about the spices, marinades or even the turn in boxes...it's about the whole spectrum of what you learn about what goes into a comp cook. I've had three CBJs cook with me this year and the end result was always the same... Holy Cow...you do this at every competition? It's not just throwing meat on a smoker...it's more about the dedication to make those six servings that go into each box the best they can be that day. Come cook with me and I will let you see everything I do and at the end of day two your butt will be tired and whooped...after we pack the trailer for the trip home. And you won't have to help do the clean-up after I get home. It's not something that most non-comp team CBJs ever see.
