Using the minion method, it seems that wood on the bottom of the charcoal pile would not light until well into the cook. Since meat absorbs smoke flavor in the beginning of the cook and not so much in the end, by the time the fire reaches the wood, the meat will not accept the flavor. Am I missing something?
