Have never used a Weber S-310 so I'm not familiar with it's capabilities. That said, chicken on a gas grill at high temps has never been a good combination for me (unless you are looking for a Cajun style of blackened chicken). A grill temp of 300-350°, turning a couple of times, usually works OK. Internal temp of not over 165° on the breasts. No sauce until the last 5 minutes on the grill, or glaze after cooking is finished.
