I cooked Dry Aged Brisket for half of last year. Tasted amazing, judges hated it. The beef taste is so strong and I am not sure they knew what to do with it. Had some of the best hot beef sandwiches on Sunday Morning after contests with that stuff. I was using Dry Aged from someone doing the dry aging the old way, without bags, but I have had the bag stuff and it is not bad.
